Creamy Turnip Soup
Vegetarian, loads of options
Ingredients
- 3 cups Peeled and cubed turnip ( white or purple )
- 1 med Onion, diced ( or mirepoix )
- 1 tbsp Olive oil
- 4 cups Vegetable stock ( any stock, broth, or water )
- 1/4 tsp Pepper ( white looks better )
- 1/2 tsp Salt, to taste - start with 1/4 tsp
- 1 cup Milk or cream
- 2 tbsp Butter
Instructions
- Warm oil to medium heat, and cook the onions until tender.
- Add turnips and stock/broth/water.
- Bring to a boil, reduce heat and simmer 15 minutes, or until turnips are tender.
- Puree in a food processor or with an immersion blender.
- Return to heat, add butter, milk/cream, salt & pepper.
Notes
Can peel up a medium carrot, fry in oil until it crisps up, drain on paper towel.
Can substitute 1 cup of mirepoix for the onion.
Can substitute any stock or broth or water.
Can add cubes of meat (precooked or brown 1" cubes before cooking the onions), or crumbled bacon.
