Bacon-wrapped Roast Beef

Preheat oven to 425
Pat dry beef
rub with salt & pepper (1 tsp sel, 1 tbsp pep)
wrap in weave, or lay strips and hold in place with toothpicks/twine
med-high heat, in oven-safe skillet sear 6-8 minutes – brown on each side
place in oven 55 minutes, until IT = 135 for med rare
Whole thing is going to be 1 hour 20 minutes

optional seasoning =
1/3c chopped parsley, 1 tb fresh rosemary, thyme, 3 tbsp minced garlic

optional stuff
sprinkle brown sugar on the inside of the bacon, or make a thick sauce with brown sugar and tomato paste (bbq sauce) after 30 minutes

eye of round is almost as good as prime rib or standing rib roasts, and significantly cheaper.
eye of round is also more lean, which is great for wrapping in bacon
