Roast Pork & stuff
Roast pork 350F 20-25min/lb IT 145 min, add 5 just to be sure.
Let rest 5-10 mins before cutting.
Since I still haven’t bought a new stick thermometer,
I’m going to err on the side of caution, and do 25 mins per pound plus an extra 10.
I was thinking of doing a rolled roast, stuffed with mirepoix, but since I have zero energy today, it’s just going to be wrapped in bacon, roasted with some taters, and then I’ll add some apples with a honey-lemon sauce.
Preheat oven to 350F
Pat the roast dry, and rub with
1/2 tsp salt, 1/2 tsp pepper 1 tsp garlic powder is about right for a 1.5 lb roast,
then wrap all that in 6-ish strips of bacon.
4-6 potaters cut to 2″ pieces. Onion (or two), cut into 2″ pieces.
all that in a roasting pan with enough oil so things can slide around.
After 30 minutes, add
4-6 Apples – cored, not peeled, cut to 1″ chunks, and give the taters a stir.
After 20 minutes, add 1/4 cup honey + 1/4 cup lemon over the apples, and stir that up.
Broil for 5-ish minutes to crisp up the bacon.
Remove, rest 5-10 mins, serve.
