Chocolate

1 oz unsweetened chocolate
3 tbsp cocoa powder
1 tbsp fat (cocoa butter, unsalted butter, coconut oil, neutral vegetable oil)

1 cup sweetened chocolate (like chips)
6 tbsp cocoa
7 tbsp sugar
1/4 cup fat (cocoa butter, unsalted butter, coconut oil, neutral vegetable oil)

Cocoa butter creates a room-temperature stable chocolate.
Unsalted butter is the next-best thing, and significantly cheaper.
The coconut and vegetable oil are less than ideal, but will work. You might need to adjust the ingredients if you’re using oil, but it’s a great start.
