Lumpia:
whisk 1/2 cup flour + 1/2 tsp salt + 2 cups water
brush thin streaks into nonstick pan on med heat for until edges pull away and the top is dry

make a stack
roll up with whatever filling, seal with egg wash.
deep fry until golden brown

 

I’ll be pan frying and seasoning up some ground beef to make savoury lumpia
finely diced carrot, onion, meat, S&P, soy sauce, serve with sweet chili or thai dipping sauce
some sweet banana lumpia (quartered banana rolled in brown sugar, wrapped, fried, dusted with powdered sugar)

 

sweet chili sauce

  • 1/3 cup rice vinegar
  • 1/3 cup water
  • 1/3 cup + 2 tablespoons cane sugar
  • 1 tablespoon rice wine (can substitute dry sherry)
  • 1 tablespoon sambal oelek (use more or less according to taste)OR 1-2 teaspoons dried red chili flakes (these are very hot, start with less and add more if desired)
  • 1 1/2 teaspoons finely minced garlic1 teaspoon finely minced ginger
  • 1 teaspoon tamari or soy sauce (use tamari for gluten free)
  • 2 teaspoons cornstarch dissolved in 1 tablespoon water (the sauce will thicken more once cooled)
  • Place all of the ingredients except for the cornstarch mixture in a small saucepan and bring it to a boil, stirring regularly. Once the sugar is dissolved stir in the cornstarch mixture, stirring continually until thickened, about 1 minute. Let the sauce cool completely, pour into an airtight jar and store in the refrigerator. Will keep for up to a week. Makes about 1 cup.

Super basic peanut sauce
1/2 cup peanut butter (natural, unsweetened)
2 tbsp soy sauce
2 tbsp sugar (brown is better)
a few drops of chili oil (optional)
2-4 tbsp hot water as needed
Whisk everything together, slowly add water to desired consistency.
optional:
1 tbsp (rice) vinegar
2 tsp chili garlic sauce (above)
1 tbsp citrus (lime is more authentic, lemon works)
3 garlic cloves, minced (not really optional)
1 tbsp grated ginger

 

 

 

Coleslaw:
1 head of cabbage (1/2 red 1/2 green for a prettier slaw)
1 thinly sliced carrot
1/2 cup buttermilk
1/4 cup mayo
1 tbsp pickle juice (or something else for tanginess like your favourite vinegar or hot sauce)
1 tsp dry mustard (or dijon)
1 tbsp sugar (optional)
1 tsp salt
1/2 tsp pepper
-> salt and let the cabbage drain in a colander for 3 hours
-> mix everything other than the cabbage and carrot, toss and serve

 

I might make some Banana Frangipane
maybe some 1 ingredient banana ice cream (guess what the ingredient is!)
