I did a basic steak, not dry brined, just in a super hot cast iron pan, and finished with my usual butter + smashed garlic + rosemary.
Went on a modern chaffle.
My chaffle had mushrooms on it, boiled for 20 minutes before grilling and slicing up. Boiling mushrooms really brings out the savory meatiness in mushrooms. If I fried them longer to dry them out, slathered it all in a sauce, this would pass for something like real meat.
Modern Chaffle
Ingredients
- 1 egg
- 2 tbsp almond flour
- 1/4 cup shredded cheese ( 50-50 cheddar-mozza is what I use )
- 1/4 tsp baking powder
Instructions
- Lightly whisk the egg.
- Add the rest of the ingredients, and mix well.
- Cook in a pre-heated mini waffle maker for 3-4 minutes.
Notes
I like to add a pinch of salt, pepper, garlic powder, and oregano.
