I took a deep casserole dish, lined it with strips of bacon starting at the middle, added layers of:

  • bite-sized chorizo sausage,
  • plum Roma tomatoes (fully scooped out, and towel-dried),
  • 1/4 cup kefalotiri (any sharp cheese will do)
  • 1/4 cup feta
  • 1 festively-coloured bell pepper, chopped and seeded
  • 8 whole eggs (I’ll whisk them next time)

I pulled the strips of bacon over the top, baked at 350 for 30 mins, removed the top, baked another 15 minutes, flipped it onto a metal baking sheet, broiled on high until the bacon was nicely browned (around 10 minutes, always watch your food while it’s broiling).
