Keto version uses the keto corn syrup and allulose instead of sugar.
Peanut Caramel
Ingredients
- 1/2 cup corn syrup
- 3/4 cup sugar
- 1 cup heavy whipping cream
- 1/2 cup milk
- 1/4 tsp salt
- 2 cups peanuts ( I like salted )
Instructions
- In a heavy-bottom pot, bring the corn syrup and sugar to a boil,stirring constantly so nothing sticks to the bottom or sides.
- After the sugar starts to turn a medium-brown golden colour (think coffee with 3 creams), whisk in the cream and milk and salt, let cook another minute while still whisking.
- Remove from heat, and stir in the peanuts.
