Coffee-rubbed roast beef

Ingredients
  

  • 1 tsp freshly ground coffee (regular grind)
  • 2 tsp packed light brown sugar
  • 1 tsp freshly ground black pepper
  • 1/2 tsp dried oregano
  • 1/2 tsp salt
  • 1 1/2 tsp oil for searing the roast ( do not use EVOO )
  • 2.5 lbs boneless beef roast

Instructions
 

  • Preheat oven to 350F.
  • Line a rimmed baking sheet with aluminum foil.
  • Mix all the dry ingredients in a bowl.
  • Rub the roast with the mix, and cover it as much as possible.
  • Place a large cast iron skillet on med-high heat,
  • After 1 minute, add the oil.
  • Once the oil is hot (shimmering), sear the beef on all sides, approx 3-4 minutes per side.
  • Transfer the meat to the baking sheet, place on the middle rack, for 65-85 minutes (25-35 mins per pound), until a thermometer in the middle shows 145F.
  • Remove from oven and let rest for 10 minutes before slicing and serving.
