Keto burger.
Testing yet another chaffle, today’s is similar to the hybrid “modern” chaffle, but no mayo.
1/2 cup shredded mozzarella
1 tbsp almond flour
1/4 tsb baking powder
1/8 tsp xanthan gum
optional 1/8 tsp nutritional yeast for flavour
pulse in food processor 10 secs
consistency of panko flakes
add 1 large egg
process 10 secs or so
scrape down
another 10 secs
1 tsp sesame seeds
quick pulse to mix in the sesame seeds
pop in waffle maker until steam comes out the side.
makes a pair of buns.
Burger: 1 lb + 1 egg + 1 tbsp vinegar + spices, maybe some shredded onion, 1 tbsp worcestershire sauce, form into 1/4 lb patties 3/4″ thick, cover, chill an hour, pan fry medium high to start, down to med once the meat is in the pan. 5-6 min first side, until grey is just over halfway up the side, flip and cook for the same amount of time minus 1 minute. Rest 5 minutes.
Meat + Chaffle = approx 700 calories, 60 g fat 4 g net carb 40g protein (all rounded up)
This does not include a few strips of bacon, and more cheese.
Brings it to around 900 calories, 75g fat, 5g net carbs, 50g protein
add some random condiments, happy to round it all up to 1k calories.
