1 pork loin roast (1.5 lbs)
1 cup of mirepoix 
3 cloves of minced garlic
9 strips of bacon (enough to cover the loin)
Bunch of rosemary, and olive oil.

The roast is approximately 50 minutes at 350F (IT 145-155 then broiled on high for 6 minutes, just to get the bacon a little more crispy, and possibly set off a fire alarm like I did the last time I made this.

Rice – rinse however much you want in a pot, and keep rinsing it until the water is relatively clear. This should be 3-5 rinses. Level the rice, and cover with water up to 1 finger knuckle.
Bring to a boil, reduce heat to a simmer, cover, and leave it alone for 25-30 minutes. Check at 20 to see if it looks dry – add some boiling water if you think it’s needed.
Fluff and serve.
