Hamburger buns were $2 ($1.45 USD), which is close enough to my cost that I actually bought baked goods.
Just in case someone wants to make their own buns, I’ve included my standard recipe.
Hamburger patties
Ingredients
- 1/2 pound ground beef ( or 100% beef instead of 50% pork )
- 1/2 pound ground pork
- 1 egg
- 1 tsp salt
- 1/2 tsp pepper
- 1 tbsp white vinegar
- 1/4 cup finely diced onions ( optional )
- 2 tbsp worcestershire sauce ( optional, replaces vinegar )
- 1/4 cup breadcrumbs/ground crackers ( optional - not keto )
Instructions
- Mix well.
- Press/form into shape.
- Let sit in fridge for at least 1 hour before using.
Butterpan Rolls / Hamburger Buns
Ingredients
- 1 cup scalded milk
- 1/2 cup water
- 1 tbsp instant yeast
- 4 tbsp sugar
- 1 tbsp extra virgin olive oil (plus 1 tsp for later)
- 1/2 cup melted butter (keep some extra handy)
- 1 egg
- 3-4 cups flour (keep some extra handy)
- 1/2 tsp baking powder
- 1 tsp salt
Instructions
- Scald the milk (bring to 195F, then let cool to 115F). Don't skip this step.
- Gently mix the yeast in a bowl with the milk , water, and sugar. Let it sit for 10-15 minutes.
- In a large bowl, mix all the ingredients. Start with 3 cups of flour, and you'll likely end up using closer to 4 - see the next step.
- Knead until it pulls cleanly away from the bowl. If you need to, add the water or flour 1 tbsp at a time. Kneading time should be around 15-20 minutes.
- Cover the ball of dough with 1 tsp of olive oil, cover the bowl, and let rise in a warm area until it doubles in size, approximately an hour. I like to cover the bowl with cling wrap, but a lint-free tea towel also works.
- Gently punch down the dough.
- If you're making rolls, cut out pieces that are roughly the size of mandarin oranges, place them so they're barely touching in a baking pan. Loosely cover, and let rise again.
- If you're making hamburger buns, you want a piece that's about 4" wide, and around 1" high, place on a baking sheet, with an inch between them. Loosely cover and let rise again.
- Bake in the middle of an oven pre-heated to 375F for 12-15 minutes, until golden brown.
- Brush some melted butter on top, transfer to a cooling rack, enjoy. Buns, rolls, and breadsticks are fine to eat shortly after coming out of the oven. Loaves of bread need to cool to room temperature before cutting into them.
French Fries
Ingredients
- 2 large Russet potatoes
- 4 cups vegetable oil for frying
- salt to taste
Instructions
- Clean (peeling is optional), and cut the potatoes into strips.
- Let soak in a large bowl of water for 30 minutes.
- Place on paper towels and pat completely dry.
- Bring oil to 275F
- Fry small batches for 3-5 minutes (depending on thickness), occasionally stirring and flipping. (Slotted spoon or something similar is required). Do not let them get to golden brown. A light shade with no browning is what we want.
- Transfer the potatoes to a paper towel-lined sheet. Cool in the refrigerator.
- Bring oil to 350F
- Fry a second time, until golden brown. Approx 3 minutes.
- Blot dry with paper towel, sprinkle salt and serve.
Notes
Each large potato makes 2 servings. Yeah right.
Keep the fries crispy and warm by placing on a cooling rack on top of a baking sheet in the oven at 225F
Ketchup
Ingredients
- 56 oz crushed tomato
- 2/3 cup sugar
- 3/4 cup white vinegar
Seasonings
- 1 tsp onion powder
- 1/2 tsp garlic powder
- 1 3/4 tsp salt
- 1/4 tsp pepper
- 1/8 tsp celery salt
- 1/8 tsp mustard powder
- 1/4 tsp cayenne pepper ( optional )
- 1 clove
Instructions
- Whisk everything together.
- Dump into a slow cooker for 12 hours on low.
- Remove the clove.
- Blend everything, strain, om nom nom.
- If too thick, gentle boil to desired thickness.
Notes
If you're in a rush, like I usually am, subtitute a pinch (1/16 tsp) for the whole clove, blend everything together, simmer until desired thickness is reached. Strain and refrigerate.
BBQ sauce = ketchup + brown sugar + vinegar + spices + heat + water
1.5 cups ketchup,
1.5 cups brown sugar (1.5 cups white sugar + 1.5 tbsp molasses)
1/2 cup vinegar (red wine is better), water
1 tbsp Worcerstershire
2 tbsp dry mustard
2 tsp paprika, salt
1.5 tsp black pepper
a few dashes of hot sauce, to taste
Blend until smooth.
