Keto French Fries
Ingredients
- 1 cup almond flour
- 1/2 cup coconut flour
- 2 tbsp xanthan gum
- 1/2 tsp salt ( I use 1 tsp )
- 1 cup very hot water
- 30 drops potato flavouring ( optional )
- oil for frying
Instructions
- Whisk the ingredients together.
- Knead into a ball, transfer to a sheet of parchment paper, and loosely form a rectangle.
- Sandwich with another piece of parchment paper, and roll out with a pin to about 1/4" thick.
- Cut to desired width, fry in oil at medium heat until golden brown (or a bit darker), dry on a paper towel, and season with whatever tickles your fancy!

Awesome fries:
Peel, boil some potatoes
Make thicc mashed potatoes with some butter, and your favourite herbs, parmesan cheese, etc.
sour cream, garlic powder, pepper, parsely, seasoning salt/cayenne pepper, shredded cheese/mozarella, and just enough milk to hold it all together. Too much milk will turn this into a brick when frozen, and impossible to work with.
Fill a freezer-safe bag withe the mix, and fill it to the same thickness you want your fries. Squeeze all the air out, make sure the contents of the bag are a consistent thickness, freeze for 2 hours.
Future test – sandwich this between 2 pieces of parchment paper, and use the flat side of a knife to make clear separations so this is easier to work with when frozen.
Remove from the bag, cut into strips, fry in 350F oil until golden brown.
Pro tip – let freeze on a metal surface so it freezes faster.
