Baked potato cups
½ lb potato, shredded
oiled muffin pan
press tater into 6 individual wells, forming cups
salt & pepper
bake 10 minutes at 375
crack an egg into each cup
add S&P, pinch of greens (parsley, green onion, etc.) chili flakes, 1 tbsp mozza on top
Bake 10-12 375 (sides should look golden brown and crispy, cheese should be fully melted, start to brown)
Waffle fries
Shred more potatoes, add oil, S&P, cook in waffle maker.
Faux Spanish Omelete
Mandolin some potatoes, lightly pan fry in cast iron pan, make enough batches to completely line the pan.
Whisk in a bunch of eggs, maybe fried onion & pepper, sliced olives, crumbled feta, tomato slices (not the goopy guts), top with a bunch of cheese, throw in the oven for 30 mins at 350, or until set.
