*GADGET ALERT* My German-made mandoline arrived! A knife works just fine, but it’s a new toy, and I’ma play with it today!
I’m taking some eggplant,
cutting it into 1/4″ thick rounds,
salting the heck out of them,
letting it rest for 30 minutes in brine/water,
rinsing the salt off,
towel dry,
egg wash (not vegan, can use any plant milk instead)
1 cup of fun breading (panko flakes, oats, flour, crushed crackers/chips/doritos, etc) with 2 tbsp of Mediterranean herbs&spices
and pan frying it.
If I wanted to make something like an eggplant parmesan, it would be the exact same thing, but in an oiled casserole dish with something resembling a marinara sauce, bunch of parmesan in the breading, mozarella topped with basil and more parmesan, and baked.
If I wanted to make something good, I’d make a proper Moussaka
I’m doing something more vegetarian today, just frying up the eggplants, potatoes, and either a bechamel sauce (which is basically a meatless moussaka) possibly something with eggs (not vegetarian anymore), or I might make a really intense sauce and make .. sammiches? Long story, but I ended up with a few loaves of bread that need to be used up soon. Maybe grilled cheese?
