1 (approx 4 lb) chicken, cut into pieces
1 cup buttermilk
2 cup AP flour
1 tsp paprika
1/2 tsp each S&P
2 litres vegetable oil for frying
Put flour in a large plastic bag with paprika, S&P
Dip chicken in buttermilk, then into the bag, seal the bag, shake it up until well coated. (a few pieces at a time). You can let the chicken soak in buttermilk for up to 4 hours, but do this in a sealed container in the refrigerator.
Let chicken rest on a sheet tray, cover with parchment paper, and let sit until the breading looks pasty
Heat large skillet 1/3-1/2 filled with veggie oil to high heat (365F)
Brown on both sides
Reduce heat, cover and cook at around 310F for 20-30 minutes., IT at the bone should be at least 155
Remove cover, raise heat to 365F, and fry until crispy.
Drain chicken on paper towels.
