Minor tweaks, here’s the recipe in progress … I’m going to make 2 batches. One regular, one with 3 spring onions and some meat.
● potatoes – 500 g
● water
● corn starch – 60 g (approx 1/3 cup rounded, sifted/very loose, should weigh this, or I’ll compress it sometime and find it’s possibly 1/4 cup?)
● salt – 1/2 tsp.
● olive oil – 30 ml
● parmesan cheese – 50 g
● mozzarella cheese – 80 g
● olive oil for pan frying
peel and boil quartered potatoes until very tender. 20 mins
mash, add up to parm cheese
Stuff the dough into 1/4 cup measure, and you should be able to get 8
Form into 8 discs 2.3-3″ diameter
put some mozzarella on top, maybe some other stuff like smoked meat, but too much and it will get silly. sammich the layers, form a puck, and make sure it’s very flat on top and bottom – it will make the finished product extra awesome.
pan fry 4-5 mins per side on med heat with a bit of oil
Serve with sour cream & chives or green onions?
