Easy Paneer Pulao – sexy recipe card TBA

cube the paneer, sprinkle with water, and toss so it’s a little damp
1/4 tsp red chili powder
1/2 tsp garam masala
1/4 tsp salt
pinch turmeric
1 tbsp flour
3/4 tsp minced (and crushed) ginger&garlic
1 1/2 tbsp oil, toss together
This gets pan fried 10 minutes before the rice is ready. Add some oil if the paneer seems dry.

 

Rice
6 cloves
1″ cinnamon stick (or 1/2 tsp ground)
1 bay leaf
3-4 cardamom pods
1/2 tsp shai jeera or cumin seeds
1 star anise
2 tbsp oil

med heat until fragrant and splattering a bit
add 1 med sliced onion and 1 small green chili
fry until golden/transparent
add 2 cloves minced garlic, until fragrant
add other veg if desired (peas&carrots,whatever) saute for a minute
add optional 1/4 cup coriander/cilantro
add optional mint leaves

add 2.5 cups water/stock/broth
add 1/2 tsp salt if using water or unsalted stockybroth
bring to boil
add 1.5 cups rinsed (basmati) rice, stir, cover, reduce to simmer, cook for 15-20 mins, stirring every 5

Serve paneer on top of rice.
