More on pumpkin pie, and how to repair crust.
The crust I made was somehow a lot more thirsty than the identical one I made last week.

Not only did I need to add 50% more water, but I still had to repair the 2 balls of dough.

I rolled out the dough as best as I could, flouring the surface and bottom, flipping, and keeping the rolling pin well-floured so nothing got stuck.
I could have sprinkled some water and then sandwiched the dough between sheets of parchment paper to make the rolling easier, but since I wasn’t in a rush, I sprinkled some water on the dough, let it sit for a while, folded the dough into itself a few times, then rolled it out again. I used a bit of water to act as glue, and cut&paste sections, and rolled them together, until I had something big and round enough to put in a pie plate. This looked like a bit of a disaster, but still worked out very well, and the pie crust looked just fine the next day when I showed it on Twitch.

The other way to repair the very dry dough was to add some water, gently work that in, form a 3-4″ disc ( not ball), cover in plastic, and let that sit in the fridge until I was ready to make another pie.
