Ginger Beef Lettuce Wraps

Changes to the original ginger beef recipe:

  • remove the step about breading the sliced beef with egg and cornstarch, and just fry it.
  • replace the sugar with erythritol or allulose. Erythritol works well in this recipe and it’s a lot cheaper than allulose.

I fried ground beef in oil, and added it with shredded veggies after turning off the heat. Two cups of green and purple cabbage, and 1 large carrot.

I also made a peanutbutter sauce:

  • 1/2 cup smooth peanut butter
  • 1 cup hot water
  • 1-2 tablespoons soy sauce, or coconut aminos for even lower carb count.
  • 1/4 tsp chili oil
  • 1/2 tsb sesame oil

Start with half a cup of hot water, and adjust. It’s amazing how much liquid peanut butter can absorb. Adjust everything to your taste before serving.
