Partially pre-recorded, because I have a charity event tonight. I still don’t know what I’m cooking after the pre-recorded segment, but I assume it’s something awesome.

Kalitsounia – this is a new recipe for me, I didn’t have everything I needed on hand, so the substitutions I made were …

  • sour cream for the yogurt
  • cream cheese for the myzithra/marscapone/ricotta
  • orange extract and some water for the orange juice

Let’s see what happens! (Yes, I’m typing this before I record it).

These are dangerous.
Things I’m going to change on the next batch:

  • I think I’ll just put 2 eggs in the cheese mix and not worry about separating the second egg and only using the white.
  • I suspect if sour cream is being used as a substitute for yogurt, some water needs to be added for the dough hold together better than on the first attempt.
  • I’m going to form the cups and let them dry/firm up some more before I fill them.
  • I think the egg wash needs some sugar in it, or maybe omitted entirely.
