I had nothing planned, but a fridge full of random things, and all y’all decided on salad and gumbo.

Here’s a traditional gumbo recipe, and Cajun Spice mix.
Here’s what I did on the stream since I was missing a lot of the ingredients:

In a large pot on medium heat, 1 cup of oil, and slowly added 1 cup of flour, constantly whisking. This is called a roux.
The roux needs to slowly cook until it turns a lighr brown colour, and make sure nothing sticks to the bottom of the pot.
I chopped up 1 pound of chorizo, cut it into 1/2″ thick slices, and lightly pan fried it in some oil.I chopped up a medium onion (around 1 cup), 1 cup of celery, minced up 3 cloves of garlic. I didn’t blend up the veggies in a food processor, which is normally what’s done in a gumbo. The onion was finely diced, and the celery was cut to 1/4″ thick pieces (1/2 cm).
I washed 5 medium potatoes, cut them into 1″ cubes, and boiled in a separate pot until fork-tender. Totally not traditional, but  gumbo is kind of like chop suey – you can throw whatever you want into it and nobody should complain too much!
The potatoes went into the gumbo, I added around 7 cups of chicken stock (this should have been heated first, then whisked into the roux before the veggies), 2 tbsp of hot sauce, 1 tsp paprika, 1/2 tsp salt. As always, make sure you don’t go overboard on the seasoning – you can let your guests add more if they want, but it’s really hard (usually impossible) to remove seasoning.

 

I cooked up a few cups of rice, and that’s it.
