I dredged the chicken once in:
1/2 cup flour
1 tbsp cayenne pepper
1 tsp salt
1/2 tsp Greek oregano
1/2 tsp garlic powder
1/4 tsp baking powder
There are a lot of ways to coat chicken, just dredge in flour+ spices, do that, then dip in egg yolks, and dredge again, or into a different mix, or some combination of 1:1 beer and flour + some egg yolks + spices, really the sky’s the limit.
fried in oil at 350F until crispy, dark golden brown, and IT hits 155F, approximately 6-10 minutes, depending on thickness, and amount of oil used. DO NOT OVERLOAD THE OIL WITH CHICKEN! Do this in small batches. This works for pieces of chicken, but make sure to measure the temperature at the bone through the thickest part of the meat.
